Grilled Porterhouse Steaks, Sauteed Snow-Peas and Scallion-Cilantro Rice

This is a great no-muss, no-fuss summer meal.

Simply heat the grill to smoking (for those all-important char-marks), make sure you’ve let the steaks come to room temperature, season liberally will garlic salt and pepper….then grill to desired done-ness.

My steaks are a bit over an inch thick, so I’ll go 5 minutes on the first side, (having lowered the heat to about medium once the grills are super-hot) then will flip them to a ‘virgin’ part of the grill (to get deep grill marks on the other side) for about 3 minutes more.  Pull them off, loosely tent with foil and voila….should have nice, juicy medium-rare steaks.

The snow-peas will be simply sauteed with a touch of oil, garlic and ginger…a *maybe* just a splash of soy sauce.

The rice is something new I’m trying, inspired by this recipe here.  If it comes out well, I’ll be sure to share!
