Simple, Delicious…and Diet, to boot!

I love soup. And though there are thousands of variations, it’s not too often that a simple soup of water/broth, vegetables and a little bit of pasta seems so incredibly out of the ordinary…but this one really, really does it. And in under half an hour no less! It must be the caraway seeds–I can’t remember ever using them in a soup before, and it is so refreshing and new…

And so tasty in fact, I immediately made another batch with the head of cauliflower I had planned to sautee for dinner this evening…it really is that good! So please, if you like any of the ingredients, give it a try. My version was based on this recipe I found on Epicurious.
Cauliflower, Swiss Chard and Caraway Soup
1 large onion, chopped
1 teaspoon caraway seeds, crushed lightly
1 teaspoon olive oil
8 cups chicken broth
4 cups water
1 small head cauliflower, cut into 1-inch cauliflower flowerets
1/4 cup orzo (rice-shaped pasta)
4 cups chopped red Swiss chard leaves, washed well and drained
In a soup pot, cook onion and caraway seeds in oil over moderately low heat, stirring, until onion is softened.

Add broth and water and bring to a boil.

Stir in cauliflower and orzo and simmer, stirring occasionally, 7 minutes.

Stir in chicken and Swiss chard and simmer until cooked through, about 3 minutes.

Season soup with salt and pepper.
Serve and enjoy!
