What Happened?

I came across these vibrantly beautiful cranberry beans at the market and immediately had visions of how beautiful the hidden beans would look scattered across a plate….

But once I had simmered them with some spices, they looked like this:
And that certainly isn’t going to bring a bright spot of beauty to any plate! Does anyone know what happened?
OK, I know what happened–the simmering leeched away all their beautiful color! So what I’m really asking is:
Does anyone know a way that I can prepare the beans that will retain that gorgeous cranberry color? If so, please, please, please share it with me..I’m obsessed with getting those gorgeous white-and-ruby beans on a plate one day soon!
