Veggie-Filled Mushrooms

My pictures continue to be awful–perhaps Santa will bring me that new digital camera I’m dreaming of…or maybe a light box…—-but this medley of vegetables turned into a tasty stuffing for half of those mushrooms!

And I must admit I was skeptical—not that I don’t like vegetables, mind you–but when there’s a sausage option available, I just assume I’ll dissapointed in the non-pork version—but this meat free filling was exceptionally tasty. Most likely due to the spinach and the peppers.

So much so that when I pulled it out for my vegetarian dinner party, I didn’t feel I was missing anything. Which was a nice change!
